History: 24 years cooking experience and 3 years as a food truck operator. Chef Johnny’s unique mobile restaurant brings the culture of Louisiana to the Great Lakes, which includes authentic Creole and Cajun dishes among other
culinary creations.
Sourcing: MorningSide Farms and other vendors at the market - vegetables, eggs, bison, etc. We also source at the Tremont Farmers' Market. We purchase from and ship all of our seafood from New Orleans on Southwest Airlines
and pick up form the Cleveland airport.
Fun Facts: I grew up in Baton Rouge, Louisiana and my wife Pamela (Barrilleaux) Schulze is Cajun. Fishing is my favorite thing to do when I am not cooking.
