Spinach Spelt Pancakes with Strawberry and Honey Sauce

1/2 cup spelt flour
1 medium apple
1 handful spinach
2 tsp honey
1/2 tsp baking powder
1/2 cup almond milk
1 tablespoon water
Fresh mint leaves (optional)

Heat griddle on medium heat and grease.  Mix all ingredients in a food processor until smooth.  Let set 5 minutes.  Spoon batter onto griddle.  Flip pancakes when bubbles appear.

Delicious when topped with Strawberry and Honey Sauce, a recipe also from Darlene and Mackenzie, and a fresh mint leaf!
